carnica from Mandi!
The Inn Friulian Mandi! Milan, which is located in Via Nicola d'Apulia 4 for the entire month of February offers in its menu the carnica tripe, cooked by Mrs. Silvana with celery, carrots, onions, fresh tomatoes and formadi frant . For the uninitiated the formadi frant unusual cheese is a sweet and spicy, made from the mixture of pieces ("fragments") of various types of cheese Carnia like "milk" of different maturity, from fresh those aged more than six months, chopped and mixed by hand with the addition of salt, pepper, spices, milk and cream in a thick dough that is allowed to rest, pressed in wooden containers for a few weeks, a solution which would enable farmers to reuse and conserve friulian unsuitable for cheese ripening. The "month of tripe Carnian (COI and was named the initiative) is an opportunity to enjoy one of the typical dishes of friulian, together with the noodles with venison and porcini mushrooms, pasta and beans, goulash and the other regional specialties.
